## Calculation of Consumption of Liquor from bottles of different volumes

Scenario: In my bar, we issue whisky in pegs from bottles of different volumes. Royal Challenge whisky is issued in 30ml Pegs and 60ml Pegs from Royal Challenge bottles of 1000ml, 750ml and 500ml. Is it possible to calculate the consumption of Whisky from all the three bottles?

Solution:

RanceLab® FusionRetail™ 6 has made an enhancement in the Recipe master by which it is now possible to calculate the consumption of whisky from bottles of different volumes. Assuming that you have already created 3 Royal Challenge whisky bottles of 1000ml, 750ml, 500ml and salable menu item Royal Challenge 60 Ml. Now please follow the steps given below in order to implement the above task.

1. Go to Main Menu > Master Data Management > F&B > Product Recipe (BOM) (M > F > R).
2. Press Alt+L at "Recipe For" field and select the recipe product Royal Challenge 60 Ml from the list
3. Enter 1 in “Quantity of Production” field
4. Enter value for “Overhead % on Food Cost” (Only if required).
5. Enter “Method/Preparation” (Only if required)
6. Come to the Product section.
7. Press Alt + L at "Product Name" column and select the bottles from the list Royal Challenge 1000 Ml, Royal Challenge 750 Ml and Royal Challenge 500 Ml from where the liquor is to be consumed.
8. Enter 1 in Quantity field for all of the selected consumable items
9. Set following Factors;
• For product Royal Challenge 1000 Ml = 16.66
• For product Royal Challenge 750 Ml   = 12.50
• For product Royal Challenge 500 Ml   =  8.33

10. Select Set 1 for all of the consumable items

11. Press Alt+S to Save to Recipe.

Effect of setting different "Factor" for different volumes of bottles:

• After consume 1bottle of Royal Challenge 1000 Ml, it will produce salable item Royal Challenge 60 Ml= (1000/60) 16.66 Units.
• After consume 1bottle of Royal Challenge 750 Ml, it will produce salable item Royal Challenge 60 Ml= (750/60) 12.5 Units.
• After consume 1bottle of Royal Challenge 500 Ml, it will produce salable item Royal Challenge 60 Ml= (500/60) 8.33 Units.

Effect of setting ‘Set 1’ for all the 3 bottles:

In order to calculate the consumption of liquor from the bottles of different volumes the “Set” option is required. On keeping same Set for all the three bottles the liquor will be consumed from any one of them. If the liquor from first bottle runs out of stock then the software automatically consumes from the second bottle.

Tips:

Similarly you can utilize functionality of Factor in order to control inventory of any cocktail type of items which consumes various types of beverages of various types of volumes.

Effect of setting different "Factor" for different volumes of bottles:

• After consume 1 bottle of Tequila 1000 Ml, it will produce salable item Jungle Cocktail 60 Ml= (1000/15) 66.66 Units.
• After consume 1 bottle of White Mischiefe 500 Ml, it will produce salable item Jungle Cocktail 60 Ml= (500/15) 33.33 Units.
• After consume 1 bottle of Black Dog 750 Ml, it will produce salable item Jungle Cocktail 60 Ml= (750/15) 50 Units.
• After consume 1 bottle of Fleurie (French) 300 Ml, it will produce salable item Jungle Cocktail 60 Ml= (300/15) 20 Units.

Effect of setting SET as “None” for all the 4 bottles:

As per the recipe, for production of 1 Unit of Jungle Cocktail 60 Ml it has to be deducted 15 Ml from each of the bottles of Tequila 1000 Ml, White Mischiefe 500 Ml, Black Dog 750 Ml and Fleurie (French) 300 Ml. Since it needs to be deducted from all of the consumable bottles, selection of any type of SET is not required.
